Conscious food preparation is the soul of Ayurvedic cooking. Mary Thompson, senior facility at CCA brings alive her Ayurvedic cooking classes with her knowledge as well as her passion. The class includes all phases of the food preparation beginning with Ayurvedic principles around food selection, aligning our choices with constitution and the season, maximizing the potential in food for generating our well-being and the well-being of those we love and feed.  Mary teaches not only the cuisine of India but also foods from different cultures. The class will incorporate a variety of menus, so that all participants will be able to apply these principles to familiar recipes after the intensive.

Mary writes, “We will learn how to infuse our food with good intention from the beginning and tips for staying focused throughout the process.  We will prepare food together as we incorporate these practices and will utilize the principles of Ayurvedic healthful dining during our meals to assure optimal healthy digestion of our foods.  We will learn how to prepare staples of the Ayurvedic kitchen as well as full meals to incorporate the six tastes and balance the seasonal energies.”

As Aristotle said, "How we do anything is how we do everything.  Excellence then is not an act, but a habit."  When we bring our conscious awareness to all phases of food preparation, we use this as our sadhana (spiritual practice) and we will bring that high level of consciousness to ourselves in other areas of our lives.  The food, infused with this consciousness will elevate the awareness of the diners.  Conscious food preparation is a gift that you can give to yourself and to those you love and serve.

Mary ThompsonMary Thompson, CAS is senior faculty at the California College of Ayurveda and was recently awarded the title Ayurvedacharya at that institution.  She has been practicing and teaching Ayurveda for more than ten years at the CCA, with private groups, and at statewide and nationwide conferences.  She brings a high level of excitement and passion to her teaching and most enjoys introducing the Ayurvedic principles in ways that can be immediately applied in everyday life.  Her classes are vital and alive with this ancient wisdom and the concepts are easily adaptable to modern life.  She will inspire you to incorporate these practices in your life and will assist you in creating avenues for your own personal evolution with Ayurveda.
